Roberto Castellano

Roberto (1988) was born in Naples to a humble, hard-working family. Since he was a child, he dreamed of being a chef, but after finishing primary and secondary school, he decided to follow his friends and enroll in a computer science program, abandoning his dream. His parents, without telling him, changed his enrollment during a vacation and enrolled him in a hospitality program. At first, he was very angry and, in rebellion, skipped school during his first year, which forced him to repeat a year. However, over time, he reconciled with that decision and began to give his all, eventually earning a diploma in Restaurant Services.

Since then, he entered the workforce without wasting time: hotels, restaurants, pizzerias, bakeries… There isn’t a food-related job Roberto hasn’t done. He considers himself a multitasker, but what he’s most passionate about—and where he says he puts his heart and soul—is baking in all its forms.

Roberto always remembers that it’s thanks to his parents that he can now dedicate himself to a job that makes him happy every day. He is convinced that if you don’t love the hospitality industry, it’s better to leave. He also enjoys singing while he works, especially classic Neapolitan songs, as he believes his dishes turn out better when his hands and voice are in perfect harmony.

His entire professional life has been spent in Naples, where he learned the most traditional recipes of his homeland. In 2020, he decided to move to Madrid, where he discovered a vibrant city, a lifestyle he loved, and new opportunities for professional growth. It was here that he met Alessandro, with whom he shared a passion for cooking.

Thanks to the support, trust, and tremendous backing of his partner, Lorena Matos Samón, the restaurant’s director, he was able to make a dream come true: bringing Dolce Positano to life. Together with Alessandro, he decided to embark on this new adventure, working side by side in the kitchen and conveying the passion of his roots in each dish.

Alessandro Giovannelli

Alessandro (1991) is originally from the geographical heart of Italy, Rieti, a few kilometers from Rome. His cuisine is clearly influenced by the flavors of Roman and Lazio traditions.

His culinary adventure began relatively late, at the age of 24, when he won a competition for amateur cooks. From that moment on, he decided to leave his job as a sales and purchasing manager for an agricultural machinery company and dedicate himself completely to cooking. Since then, he has accumulated valuable experience in northern Italy (Modena and Mantua), France, Armenia, Belgium—where he met Adriana, his future wife from Madrid—and, since 2021, in Spain: first in Vitoria-Gasteiz and later in Madrid, where fate brought him and Roby together to bring this wonderful project to life.

His cuisine has been forged alongside great Italian and European chefs, consolidating his unique style: starting with a traditional recipe and elevating it with contemporary techniques and knowledge.

Among his passions is making homemade stuffed pasta, which he himself defines as one of his favorite sports.
